Avocado and Lime Salmon Tacos
Salmon tacos with a tangy and creamy avocado and lime dressing, yum! Packed full of flavour and super easy to make for a fun Taco Tuesday.
RECIPE: Avocado and Lime Salmon Tacos
INGREDIENTS:
Makes 3 serves
- 2 x 110g salmon fillets
- 1 tsp paprika
- Sprinkle of salt
- Sprinkle of pepper
- 6 small corn tortillas
- 1/4 of an avocado, sliced
- 1 cup red cabbage, shredded
- 1 cup rocket
- 1/3 cup corn kernels
- Coriander leaves, to serve
Dressing:
- 1/4 of an avocado
- 3 Tbsp greek yoghurt
- 2 Tbsp lime juice
METHOD:
- Preheat oven to 180C.
- In a small bowl coat the salmon fillets with the paprika, salt and pepper. Place the salmon on a lined baking tray and bake for 15 minutes
- For the dressing mash the ¼ avocado in a small bowl. Add the greek yoghurt and lime juice and mix well.
- Heat a small non-stick frying pan over medium heat. One at a time add the corn tortillas and heat for 20 seconds on each side.
- Assemble the tacos by dividing the avocado, cabbage, rocket, corn and salmon between the tortillas. Top with the dressing and serve with some coriander leaves
