Avocado and Lime Salmon Tacos

Salmon tacos with a tangy and creamy avocado and lime dressing, yum! Packed full of flavour and super easy to make for a fun Taco Tuesday.


RECIPE: Avocado and Lime Salmon Tacos


INGREDIENTS:

Makes 3 serves

  • 2 x 110g salmon fillets
  • 1 tsp paprika
  • Sprinkle of salt
  • Sprinkle of pepper
  • 6 small corn tortillas
  • 1/4 of an avocado, sliced
  • 1 cup red cabbage, shredded
  • 1 cup rocket
  • 1/3 cup corn kernels
  • Coriander leaves, to serve

Dressing:

  • 1/4 of an avocado
  • 3 Tbsp greek yoghurt
  • 2 Tbsp lime juice

METHOD:

  1. Preheat oven to 180C.
  2. In a small bowl coat the salmon fillets with the paprika, salt and pepper. Place the salmon on a lined baking tray and bake for 15 minutes
  3. For the dressing mash the ¼ avocado in a small bowl. Add the greek yoghurt and lime juice and mix well.
  4. Heat a small non-stick frying pan over medium heat. One at a time add the corn tortillas and heat for 20 seconds on each side.
  5. Assemble the tacos by dividing the avocado, cabbage, rocket, corn and salmon between the tortillas. Top with the dressing and serve with some coriander leaves
