Healthy Back To School Snacks for Kids: After School & Weekend Recipes

With kids heading back to school, here are some healthy snack recipes perfect to fill your kid's hungry bellies after school and on the weekends.

Nuts are a great food to include in your kids snacking because they are packed with nutrients like protein, healthy fats, iron and magnesium to support and fuel growing bodies and fill hungry tummies! 


Recipe: Nutty Sweet Potato Rolls   

Ingredients:

Makes ~ 6-8 rolls

  • 1 tbs Extra Virgin Olive Oil
  • 1 large sweet potato, peeled and sliced lengthways as thin as possible 
  • 2 tbs sundried tomatoes  
  • 2 tbs fresh, coriander chopped
  • 1 lemon, juiced  
  • 2 tsp cumin  
  • 1/2 teaspoon paprika 
  • 1/2 cup mushrooms, sliced
  • 1 garlic clove, peeled and chopped 
  • 1 cup walnuts (or other nut of choice)
  • 1 small carrot, peeled and grated
  • 1 small cucumber, thinly sliced
  • 1/2 avocado, thinly sliced 


Method:

  1. Heat olive oil in a fry pan over medium heat. Place sweet potato slices on pan and cook on both sides until cooked through. Set aside.
  2. In a high speed blender, place sun-dried tomatoes, coriander, lemon juice, cumin, paprika and garlic. Blend for 1 minute. Add walnuts and blend until a slightly chunky texture forms. 
  3. Lay sweet potato slices individually on a chopping board. Divide walnut mixture evenly and spread on top of sweet potato slices. Top with carrot, cucumber and avocado slices. 
  4. Roll sweet potato slices with mixture inside, lightly pressing ends down. Serve and enjoy. 


Nutty Toast Toppings 

Get your kids active in the kitchen by letting them try these delicious nutty toppings. They can have fun mixing and matching the topping and trying them on toast, rice cakes, English muffins, buns and crumpets. 

  1. Sliced banana, nut butter and dessicated coconut
  2. Chopped dates and nut butter 
  3. Honey, sliced banana and crushed mixed walnuts 
  4. Berries and nut butter 
  5. Nut butter, chia seeds and berries 
  6. Grated carrot and nut butter 
  7. Raisins and nut butter 

You can make your own nut butter by simply placing nuts of your choice in a high speed blender and mixing until a spreadable texture forms - can be smooth or crunchy depending on your preferences.
